↓ DETAILS

Each year we set a side a bottle or two from our larger cider production and let is slow ferment with a mother from the previous years batch in glass. 

The bottles were designed to be reused. If bottles are saved and returned we will reuse them for the following year. 

↓ MATERIALS 

Apples - from century old trees of no known varietals from Tesuque NM 

Native yeasts - from the apple skins and those present in the atmosphere on our ranch 

Glass bottles - fermented in glass and aged in glass under ground in our root cellar 

↓ PROCESS 

Hand harvested and pressed 

Fermented slowly in glass

Nothing added aside from pressed apple juice and natural occurring mother 

↓ CONSUMING 

Use however you would use your favorite vinegar
